If there is ever a time to enjoy the spice of life, it has to be during the days that span between January 6 and Mardi Gras (Fat Tuesday). Before Ash Wednesday, the first day of Lent, this parade of days, this carnival of colors, rhythms, and revelry see winter holidays dance head-long in frenzied crescendo, to a screeching halt at the door of the season marked by reverence and quiet reflection.

Fun fact: David’s family spent a few of his formative years in southern Louisiana. When he returned to Texas, he brought with him a gorgeous lyrical accent that put my Lone Star drawl to shame. With time, his accent faded, but his genuine love for his Louisiana folks and their bayou-inspired foods and culture abide to this day.

In our home, we celebrate this time of year with favorite Louisiana dishes. With David cooking, of course, they’re made with a Texas twist. Spoiler Alert: Be on the look-out for David’s take on Green Gumbo. He whips up a batch as I write. From my perch at our kitchen table, I watch him across the room as he prepares ingredients to cook. The staccato of his knife chops veggies in time with my typing. I wish you could be here. It’s about to smell like heaven, y’all!
