At our house, this week marks the first week of preschool for our sweet granddaughters. After careful consideration and a family meeting or two, their folks, and David and I have decided to work together to begin this new educational journey at one of the girls’ favorite places on the planet, our house, aka, Mimi’s house. On preschool days, Mimi’s house officially becomes The Mighty Girl Academy, where mighty girls discover their super powers.
Under the best of circumstances a new school year brings new challenges and new challenges take time. This year, in particular, this Back to School start probably looks and feels like something entirely new to most of us. For some of us, new feels exciting! For some of us, new feels scary! For some of us, new feels exciting and scary and in need of all the exclamation points at the same time!!!
While I look forward to sharing preschool time with our girls, I’m aware that like many of you, our new back to school routine will challenge our weekday rhythms. My plan is to turn to my easy to prepare, stress free recipes to help ease me into my new weekly routine.
For me, easy stress-free cooking begins with my slow cooker. Between it and one of my husband David’s amazing cooking salsas, all the heavy lifting is basically done for me. Chipotle Pulled Chicken Tacos are a family favorite. I make this dish on a regular basis, especially if it happens to be Taco Tuesday!

If I am in the kitchen, so are my granddaughters! Cooking together is one of our favorite things to do. One recipe we like to make together is literally the easiest, most memory making recipes we have and the girls love it. Trust me when I say, after you experience Chocolate Chipotle Brownies, you might not want any other kind. When David served as a private chef at a nearby retreat center, it soon became the most requested dessert he received. When the girls bake with GrandDaddy, they are treated to the homemade version. When they bake with me, we’re all about easy breezy. Either way, it is truly love at first bite!
Easy Chocolate Chipotle Brownies
- 1 box Your Favorite Brownie Mix or Your Favorite Homemade Recipe
- 1/2 cup Bernard's Gourmet Roasted Tomato y Chipotle Cooking Salsa blended till smooth
- Up to 1/2 tsp Chipotle powder Optional
- Blend salsa until smooth
- Prepare Brownies as indicated on box, SUBSTITUTING WATER with indicated amount of blended salsa
- If you desire a more spicy bite, either add up 2 tablespoons of blended salsa, OR up to 1/2 teaspoon of Chipotle Powder to taste
- Bake per Your Favorite Brownie Recipe instructions and Enjoy! Pairs well with vanilla ice cream.
