3 Ways To Enjoy Leftovers After The Big Game

Chips & Salsa For Breakfast?
Yes, Please!

First things first: Did your team win? We sure hope so! Either way, we do hope y’all had as much fun eating and drinking, I mean, watching football with family and friends as we did!

Like us, y’all might be waking up to leftover chips and salsa. To which we say, YEA! There’s no better way to elevate post-game breakfasts and score big with family all at the same time! Here are three ways we like to think #OutsideTheJar in the Bernard Household:

Migas

Ingredients

6 large eggs

Splash of milk

Kosher salt to taste

Fresh cracked pepper to taste

1 TB Olive Oil

1 small onion (white)

1 lg. clove garlic

1 jalapeño (or milder or hotter pepper or choice; this is optional depending on how you like your heat!)

1/3 c (or whatever leftover) Bernard’s Gourmet Salsa to taste (be sure to reserve some for topping!)

1 handful crumbled tortilla chips

1/3 c shredded Mexican-blend cheese

SUGGESTED TOPPINGS: Bernard’s Gourmet Salsa of choice (we LOVE our TOMATILLO Y POBLANO for Breakfast!) Avocado slices, Fresh cilantro, diced onion, diced tomato, Mexican crema, sour cream, and/or queso fresco

In a large bowl, whisk together eggs, splash of milk, Kosher salt, and fresh cracked pepper. Set aside

In skillet, heat olive oil over medium heat. Add onion, and pepper, stirring occasionally until onion soft/translucent. Add garlic, sauté for one minute longer or until garlic is fragrant.

Add in egg mixture. Stir until eggs are scrambled. In order: Stir in salsa. Stir in cheese. Stir in tortilla chips. Remove from heat.

Serve with above listed suggested toppings and enjoy!

Follow egg-scramble recipe used for Migas.

In microwave, Heat 2 Corn tortillas for 10-15 seconds.

Wrap 2 TB. egg mixture and favorite suggested topping(s) in warm tortilla

Bernard’s Breakfast Burritos

Brunch Enchiladas

Have a little of this and a little of that leftover? Great! Roll that yummy stuff up, top with Bernard’s Gourmet Salsa, and any suggested topping and enjoy! You can use scrambled eggs, breakfast sausage (leftover sausage balls, anyone?) roasted chicken, sautéed veggies, black beans, etc. Use your imagination and come up with whatever delicious combo you want! Once you decide, mix your filling with a generous splash of your favorite Bernard’s Gourmet Salsa. Then:

Heat oven to 350

In microwave, Heat tortillas for 10-15 seconds

Coat bottom of small oven safe casserole dish with favorite Bernard’s Gourmet Salsa

Place tortilla in mixture and Fill tortilla with desired filling. Roll tortilla in dish ending with seam down. Repeat until dish is filled.

Top enchiladas with Bernard’s Gourmet Salsa, shredded Mexican-Blend cheese

Bake enchilada for 20 minutes, or until cheese is bubbly on top.
