Slow Soak Instructions: Cover beans with water (at least 3 inches over beans) and let sit overnight.
Quick Soak Instructions: Add beans to a pot and cover with at least 3 inches of water and cover with lid. Turn heat to high and bring to rapid boil for 1 minute. Remove from heat and leat soak, covered for 1 hour. Drain and rinse beans, then proceed with the recipe.
Cut 7 slices of bacon into 1 inch pieces
Sautee bacon in cooking pot until slightly crisp (about 5 minutes). Drain and reserve drippings.
Ad 1 TB of bacon dripping and bacon back into the cooking pot with 1/2 chopped white onion and cook over medium heat until tender.
Add beans and fill pot with enough water to cover beans with at least 2 inches of liquid.
Add 1 jar of Bernard's Gourmet Foods Tomato y Chipotle Cooking Salsa.
Over medium-low heat, cook beans until tender (about 2 hours).
